Chicken Spectacular Casserole

If one of my friends  . . . has a baby, is recovering from surgery, or has a death in the family . . . this is the chicken and wild rice casserole is the perfect casserole to make for them.

It is my “go-to” casserole because it is easy to make and DELICIOUS!

My Mom shared this recipe with me many years ago and is in her handwriting. Because this casserole is so delicious and easy to make, my recipe card is very stained and faded.

Serves 8-10 people depending on individual portion size.


  • 6 oz box Uncle Ben Long Grain Wild Rice
  • 3 cups cooked chicken (You can boil a chicken or do what we do and purchase a Publix Deli Oven Roasted Chicken, either original or lemon pepper.) NOTE: One chicken typically yields approximately 4 cups of diced chicken.  I freeze the extra cup of chicken meat and have it on hand for other recipes.
  • 2 cups chicken broth
  • 1 can cream of celery soup
  • 1 small (4 oz) jar of pimentos
  • 1 can French-style green beans (drained)
  • 1 can (8 oz) sliced (drained) water chestnuts (Even though these are sliced, I chop in smaller pieces.)
  • 1 cup mayonnaise
  • Mix all ingredients together in a LARGE bowl, and place in a large (9×13 works) casserole dish.
  • Bask at 350 degrees for 45-55 minutes uncovered.
  • Stir and cook for 30 more minutes covered.

Notes about this delicious chicken and wild rice casserole:

  • Because there are only two of us (empty nesters), we typically portion into 3-4 smaller casseroles after mixing all the ingredients. We cook one smaller casserole and freeze the remaining for future use.
  • We sometimes double this recipe and freeze the remaining for future use.
  • We typically portion and freeze in gallon Ziploc bags.

I am typically not the cook; Neal is our cook and he is a good one! However, this casserole is easy and delicious, even I can make it!
